This is such a versatile and simple meal I would suggest it for meat eaters and vegetarians alike! It must be … the one and only… Spaghetti Bolognese (vegetarian friendly).
Serves 6-8
Spray oil
2 Onions
2 Carrots
2 Garlic cloves (more if you love garlic)
3 spring onions (I added these because they needed using up)
2 celery sticks
Handful of mushrooms
450-500g of soya mince
2 cans chopped tomatoes
2 tablespoons tomato puree
1 tablespoon tomato ketchup
splash of worchestershire sauce
salt and pepper
Chilli flakes – optional
Herbs de provence/ dried basil/ herb of choice
Fresh basil leaves to garnish
Finely chop the onions, carrots, garlic, spring onions, celery and mushrooms and fry in spray oil on a medium heat untill softened and not browned. Add the herbs, mince and chopped tomatoes and then 1.5 cans full of water. cook for about 10 mins covered then take the cover off and add all the other ingredients except the basil leaves. Stir occassionally. Mine took about 25 mins in total to get to a nice thick consistency.
Cook enough spaghetti for however many you are feeding.
Serve with the basil leaves on top and a salad of lettuce, tomatoes, cucumber and some balsamic vinegar!
