Working in an office I like to pack myself a lunch every day. It means I don’t spend all my money at lunchtime in the shop or bakery, I eat more healthily and control what is in my food. It also gives me an excuse to come up with some new ideas!
Today I have packed myself some home made cous cous salad with 4 large slices of courgette which have been grilled until soft and slightly browned. Once heated up in the microwave in my office kitchen I will serve this with some green salad. Delicious!
Another favourite of mine is “All in salads” where you can use up items from your fridge/ cupboard to create a delicious lunch. My most recent salads were watercress leaves, lettuce leaves, sliced plum tomatoes, red pepper, sliced boiled egg, blanched asparagus, pumpkin seeds and a dressing of olive oil, lemon juice and wholegrain mustard. The second salad was mixed lettuce leaves, sliced cucumber, roasted beetroot, spring onions, sunflower seeds, feta cheese and a sweet chilli dressing.
For those colder lazier days when I need something more substantial I love a good pasta dish. I will post my courgette pasta recipe soon!
