Avocados are known as a super food because they are high in fibre, they can stabilize sugar levels, lower cholesterol, maintain good eye health, protect against cancer, prevent anti ageing and many more.
As well as being an all round body protector they are incredibly versatile and helpful for a vegan cook. The consistency is creamy and it has a very subtle taste which is easily matched to many different flavours.

Moroccan Spiced Roasted Vegetable Salad with an Avocado dressing
For this salad recipe I used an avocado in the dressing to make it thick and creamy. The natural oils made it glossy and the herbs complimented the flavour perfectly.
Using avocado in a dressing can also help to balance out a spicy salad such as this one!
Avocado Mash Bruschetta with Asparagus and Tomatoes
I made a sort of guacamole for this bruschetta which contrasted nicely with the crunchy toast and tangy tomatoes. Avocado is great when you want something fresh and healthy yet filling!
I had so much fun making vegan sushi, I really can’t wait to do it again! Avocado was a perfect filling for inside out maki rolls and went perfectly with the pickled sushi ginger and crunchy sesame seeds.
You could also mash the avocado with some chilli for sushi with a hit!
Creamy Vegan Potato Salad
Traditional potato salad is made with yoghurt or mayonnaise. For my British Classics Made Vegan feature I decided to make a healthy version using blended avocado as the sauce.
This salad would go down a treat at any BBQ or party and the avocado make it extra creamy 🙂
Baked Spinach and Avocado
The idea of warm avocado is a little different but it is delicious! I love making baked eggs but I’m aware a lot of my readers are vegan so I wanted to create something they can enjoy.
The avocado stays creamy and melts into the spinach and mushrooms. Avocado for breakfast will also set you up nicely for the day.
BBQ Grilled Avocado with Balsamic Glaze
Another hot avocado recipe! I went to a BBQ and decided cutting an avocado in half and placing it cut side down on the grill would be nice…and I was right, with a bit of balsamic glaze it was perfect to go with some salads and veggie sausages. This would also be really nice with Ketchup 🙂
Avocado Sandwich Rolls – Afternoon Tea Style
Finally my other favourite avocado recipe was this afternoon tea sandwich idea with avocado, cream cheese and cress. As well as being really pretty they were delicious.
Avocado in sandwiches is a great idea, you could blend it to make a vegan cream cheese or slice it to add a silky texture.
