Once I had made different flavours of banana ice cream (see yesterdays post) I decided to take it to the next level and create my own ice cream sundae.
Ice cream sundaes are layers of ice cream, fruit, chocolate or fruit sauce and topped with sprinkles. Varieties can include all sorts of layers such as whipped cream, fudge pieces, brownies, biscuit, strawberries and marshmallows. I kept mine simple but decadent with a dark chocolate drizzle, fresh blueberries, raw macadamia nuts and vegan chocolate sprinkles.
There are so many ways to be indulgent whilst being vegan, the only drawback is convenience. The supermarkets are full to the brim of dairy laden frozen delights and I spent hours trying to find some vegan ice creams, sauces and sprinkles.
The great thing about this ice cream is it can be made from ingredients you have in your home – bananas and cocoa powder and then top it with whatever you fancy! No need to trek the whole food shops looking for expensive alternatives. I think this is why vegans become so interested in cooking, it’s easier and better to cook your own that look in the shops!
There is no real recipe here, just take 3 scoops of ice cream in a glass, add fruit, nuts, melted chocolate and chocolate sprinkles! Enjoy!
