About Becky

Hi!

“My names Becky and I’m a Vegaholic”

I was bought up with a lot of variety in my diet, loads of vegetarian foods and all really healthy! When others had packed lunch boxes full of jam sandwiches and crisps I had flasks of vegetable soup, big salads, home made wholewheat veggie pasties and we even used to pinch our nose, squirm up our faces and rush down a big glass of green juice each morning. Then I went to university where I went a little off the health rails (alcohol, chocolate and fried chicken) and ended up eating a lot of junk foods instead of taking forward the lessons I had learnt as a child.

When I left university I had to really try to put healthy meals on the table on a very limited budget. We were determined to turn our eating habits around so our meals became very simple with everything made from scratch, lots of vegetables and really quite simple honest food. This focus on “real food” ignited a passion for cooking in me and so Veghotpot was created!

I am a “Foodie turned Unintentional Fussy Eater” because I have gone from being the sort of person who could shut my eyes in a restaurant, plonk my finger down on the menu and happily eat whatever fate gave me, however since learning so much about food I am now eating a mostly vegan and gluten free led lifestyle which means I am now a very fussy restaurant customer!

Veghotpot is my way of sharing recipes I come up with, the food you will find on here is all vegetarian with many twists on classics. I hope to help inspire people to cook from scratch, eat more vegetables and try something different. I do not try to convert anyone to becoming vegetarian and although I have my own views I feel that the focus should be on the food, I just try to create meals which everyone would like including meat eaters! The world of vegetarian food is so massive and the variety of dishes are endless, there is so much to learn and enjoy and I have very quickly realised that you can eat a very healthy, balanced and nutritional diet without adding meat!

You can subscribe to my blog through email or click the link to my Facebook and Twitter pages where I post a lot of “thoughts on the go”. You can also email me at veghotpot@hotmail.co.uk

I hope you enjoy reading veghotpot as much as I enjoy writing it 🙂 xxx

  1. Hey there Becky! Thanks for checking out my dish for the pot luck. I was hesitant about doing the pot luck because I’m a new blogger and my food photography skills are lacking. But everyone’s been so gracious with me, so I’m glad I took part. It’s been a wonderful way to meet other veggie bloggers such as yourself. I love that you have a seasonal produce guide and recipes. I know it’s better in so many ways to cook foods that are in season, but I’m never sure what’s in season. Your blog is fabulous, and I’m so happy to e-meet you!! Celeste:)

    • Hi Celeste, thank you so much for your lovely comment! Really glad you took part in the potluck, its a great way to meet new people and get inspired by new things to cook 🙂 make sure to keep in touch! Looking forward to seeing more posts from you, Becky x

  3. Hey Becky,
Thanks for stopping by and liking my post. Totally can relate to the slippery slope of junkaholism – I myself am a recovering junk foodaholic from University days. Your recipes look ahhhhmazing! Can’t wait to try some out, keep up the good work 🙂

  5. Hi Becky – I need your help! I’m writing a follow-up post about my New Year’s Resolutions, and I’d like your input. Since you’re a vegetarian, how can I (a meat eater) incorporate at least one fruit or vegetable into every meal? I will include your answer and link to you 🙂 Feel free to shoot me an email at downhomesj@gmail.com. Thank you!

  6. This sounds just like what I need to be reading! I just founf out I am very allergic to food mold, so, CHEESE! My favorite thing! So i am hunting for new recipes now. : )

    • Oh no! Well I do eat a little cheese but most of the recipes on here will be dairy free so hopefully you’ll find something nice to eat which is in line with your allergies 🙂
Never heard of a food mould allergy before, is it just cheese or do other foods contain it? would be interesting to know! x

  10. Wow- your blog is great; funny and informative. I love the way you choose your dish from a resturant menu, narrowing it down to a simple selection.
It is not so difficult these days to be a lactose intolerant vegetarian!
I am looking forward to the next post and recipe.
